Where the calories live
The heavy cream brings the biggest share of the calories here, about 57 percent of the batch, with the granulated sugar next in line.
Caramel kissed cream with the sea salt held back for the mix in, so little salty pops land in every spoonful. Seaside stand energy, straight from the pint.
Sweet caramel cream with little salty pops hidden in every spoonful, so each bite swings between cosy and surprising; it tastes like a seaside candy shop in the best way. It suits sundae nights, warm pie on the side, and anyone who licks the salt off the pretzel first.
A few simple ingredients for a big, delicious idea.
Put the cream cheese in a medium microwave safe bowl and microwave for 10 seconds. Add the sugar and caramel extract and whisk until the mixture looks like frosting, about 60 seconds. For a Deluxe pint, use 1½ tablespoons cream cheese, ½ cup sugar, and 1½ teaspoons caramel extract.
Slowly mix in the heavy cream and milk until fully combined and the sugar is dissolved. For a Deluxe pint, use 1 cup plus 2 tablespoons heavy cream and 1½ cups whole milk.
Pour the base into an empty pint, place the storage lid on, and freeze for 24 hours.
Take the pint out of the freezer and remove the storage lid, then set the pint up in the machine. For a Deluxe pint, select TOP, FULL, or BOTTOM before choosing the program.
Select ICE CREAM and let the program spin the frozen base into ice cream.
With a spoon, create a 1½ inch wide hole that reaches the bottom of the pint. Add the sea salt to the hole (1½ teaspoons for a Deluxe pint) and process again using the MIX-IN program.
When processing is complete, take the ice cream out of the pint and serve immediately.

A happy middle: real treat flavor without going over the top.

Most of the flavor rides on the heavy cream, and the numbers stay in treat territory rather than meal territory.
Swap half the heavy cream for whole milk. The spin stays creamy and every serving lands noticeably lighter.

Holding the salt back keeps it in distinct little crystals that pop against the sweet caramel, instead of dissolving into a uniformly salty base.
For a Deluxe pint: 1½ tablespoons cream cheese, ½ cup granulated sugar, 1½ teaspoons caramel extract, 1 cup plus 2 tablespoons heavy cream, 1½ cups whole milk, and 1½ teaspoons sea salt as the mix in.
Run the respin program once before adding the mix in. A very cold freezer often needs that extra pass for a smooth scoop.
Fine sea salt is the best swap because it disperses in small pops. Coarse flakes work too, but use a little less so no single bite turns harsh.
